Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the mixture

  1. In a bowl, combine the flaked fish, mashed potatoes, breadcrumbs, egg, salt, and pepper. Mix until well combined and form into small patties.

Fry and serve

  1. Heat oil in a frying pan over medium heat.

  2. Fry the patties until golden brown on both sides, about 3-4 minutes per side.

  3. Drain on paper towels before serving.

What each ingredient does

Cooked fish
Provides the main body and flavour of the croquettes.
Mashed potatoes
Adds moisture and binding so the patties hold their shape.
Breadcrumbs
Absorb moisture and help the patties hold together and brown.
Egg
Binds the mixture so the patties set firm when cooked.

The step that matters

Forming and frying the patties. The mixture must be well combined and firm enough to shape, or the patties may fall apart. Frying over medium heat lets the centre warm through while the outside turns golden without burning.

Swap the potato

How well each one fits the dish's main ingredients (fish, egg, pepper):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Spinachfits about as well
  4. Potatothe original
