What each ingredient does

Milk
Forms the liquid base of the drink and supplies its creamy body and flavour.

The step that matters

Boiling the milk mixture. Milk can scorch on the base of the pan and boil over quickly. Keeping the heat controlled and stirring helps prevent sticking and spills, and the milk proteins can form a skin if left unattended.
