Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Combine rye flour and Indian corn flour in a bowl.

  2. Add any optional flours if desired.

  3. Mix in warm milk and yeast until well combined.

  4. Knead the dough until smooth.

  5. Let the dough rise in a warm place until doubled in size.

  6. Shape the dough into a loaf and place it in a greased pan.

  7. Allow it to rise again until it has expanded.

  8. Bake in a preheated oven at 400°F (200°C) for about 30-40 minutes or until golden brown.
