German Souffle

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Place thick-stewed apples in a dish.

  3. Pour thick yolk of egg boiled custard over the apples.

  4. Whip the white of egg until stiff, then sweeten and flavor it.

  5. Pile the whipped egg white on top of the custard.

  6. Lightly color the top in the oven until golden.
