Apple Turnovers

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Roll out the rich pastry dough and cut into rounds with scalloped or plain edges.

  2. Place a spoonful of apple marmalade in the center of each round.

  3. Fold the dough over to create a half-moon shape and seal the edges.

Glaze and bake

  1. Brush the tops with egg wash and dip in granulated sugar.

  2. Bake in a preheated oven at 400°F (200°C) until golden and glazed.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich pastry dough
Forms the flaky, tender shell that encloses the filling and browns in the oven.
Apple marmalade
Provides the sweet, concentrated apple filling that stays inside the sealed pastry.
Egg wash
Gives the tops a glossy surface and promotes even golden browning.
Granulated sugar
Adds a sweet, crunchy crust on top that caramelizes slightly in the oven.

The step that matters

Seal the edges. If the edges are not sealed firmly, filling can leak out and burn on the baking sheet, and steam may escape unevenly, leaving the turnovers less neat and less evenly cooked.

Swap the apple

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Applethe original

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
