What each ingredient does

Chicken
Provides the main protein, which becomes tender through slow covered cooking in liquid.
Onions
Sautéing until golden adds sweetness and a savoury base to the sauce.
Clarified butter
Carries the spices and gives the curry a rich, fatty mouthfeel.
Red chillies
Provide heat and colour to the spice paste.
Coriander seeds
Add a warm, citrusy aroma when roasted and ground into the spice base.

The step that matters

Coat the chicken with the spice mixture before cooking. Frying the ground spices briefly in fat and coating the meat lets their aromatic compounds bloom and cling to the chicken. Adding too much water early can dilute the spices and leave the sauce flat.
