Roast Quail

Ingredients

Directions

  1. Scorch the quails and clean them, restoring the livers.

  2. Skewer the quails through the thighs with a small slice of crustless bread between each bird.

  3. Secure the roast with a skewer passed through each end of the spit.

  4. Brush the quails with butter.

  5. Roast before a sharp fire, basting carefully for 10 minutes.

  6. Season with coarse sea salt, remove from the spit, and serve on a hot dish.

  7. Pour the basting sauce over the quails and surround with slices of lemon.
