Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Place the steak in a pie dish and add a little water to baste it.

Bake and serve

  1. Bake for 30 minutes.

  2. Remove from the oven and cover with sliced onions; bake until the onions are tender.

  4. Sprinkle grated cheese on top and return to the oven until melted.

  5. Baste the steak every 10 minutes during baking.

What each ingredient does

Round steak
Provides the main protein; slow oven baking with basting keeps the meat moist and tender.
Onion
Softens as it bakes, adding sweetness and savoury flavour to the topping.
Tomato
Releases juice as it bakes, adding moisture and a bright acidity to the dish.
Grated cheese
Melts over the top, adding fat, richness and a browned savoury finish.

The step that matters

Basting the steak every 10 minutes. Round steak is lean and can dry out in the oven. Regular basting with water keeps the surface moist during the long bake, helping the meat stay tender.

Swap the onion
