Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. Boil the potatoes until three‑quarters cooked, then let them cool and slice them.

  3. Bruise the kidneys in a mortar until they are in pieces.

  4. Trim the fat and skin from the mutton cutlets.

  5. Mince the mushrooms after removing all the white parts.

Assemble and cook

  1. In an earthenware pan, layer the cutlets, kidneys, potatoes, oysters, mushrooms, salt, pepper, and curry powder alternately.

  2. Pour the oyster liquor over the layers.

  3. Simmer gently in the oven for 3 to 4 hours.

Finish and serve

  1. Prepare a rich brown gravy.

  2. Add the gravy to the hot‑pot half an hour before serving.

  3. Serve directly from the pan.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton cutlets
Provide the meat that becomes tender during the long, slow cooking.
Potatoes
Form the sliced layers that soak up cooking juices and set the crust-like top.
Sheep's kidneys
Add a rich, strong meaty flavour that deepens during slow simmering.
Oysters
Contribute a briny, savoury flavour that blends into the layers.
Oyster liquor
Adds moisture and concentrated seafood flavour to the layers as they cook.

The step that matters

Simmer gently over a long time. Gentle, prolonged heat lets the mutton's connective tissue break down into tender meat without toughening it. Boiling would make the meat tough and dry out the layers.

Swap the potato

How well each one fits the dish's main ingredients (mutton, oyster, mushroom, pepper):

  1. Shallotfits better
  2. Capsicumfits better
  3. Spinachfits about as well
  4. Potatothe original

Fit is the average pairing score against mutton, oyster, mushroom, pepper. Candidates are from the same food group and used in at least 100 recipes.
