Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Cover the bottom of a baking dish with thin beefsteak.

  3. Layer halves of pigeon on top of the beefsteak.

  4. Add hard-boiled yolks, forcemeat balls, mushrooms, and thin slices of bacon.

  5. Pour strong beef gravy over the layers.

  6. Cover with a pastry crust.

  7. Bake for 1.5 hours.
