Why it works: Pine and lemon match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 480 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

The Way the Italians Fry Liver

Ingredients

Directions

Prepare the sauce

  1. Cut the calf's liver into slices.

  2. Fry half of the slices in butter until cooked.

  3. Pound the fried liver in a mortar with capers, pine seeds, allspice, and sugar.

  4. Strain the mixture and add lemon juice, pepper, salt, and vinegar.

  5. Keep the mixture warm in a hot-water bath or near the fire.

Fry and serve

  1. Flour the remaining liver slices and fry them in fresh butter.

  2. Place the fried slices on a plate and pour the sauce over them.

  3. For added flavor, roll each slice of liver around a piece of bacon and a slice of truffle, then tie or skewer them together.

What each ingredient does

Calf's liver
Forms the main body of the dish, cooking to a tender, meaty texture.
Butter
Fat for frying that adds richness and promotes gentle browning on the liver.
Capers
Add briny acidity that cuts through the richness of the liver and butter.
Flour
Coats the remaining slices, helping them brown and form a crisp outer crust when fried.
Lemon juice
Adds bright acidity that balances the rich, fried liver flavour.
Pine seeds
Contribute a toasty, nutty aroma and a crunchy-soft texture to the sauce.

The step that matters

Fry the floured liver in fresh butter. Liver is delicate and overcooks quickly, turning dry and grainy. Flour helps form a browned crust, but the butter must be hot enough to brown the coating without burning, and the slices need only brief cooking so they stay tender inside.

Swap the allspice

How well each one fits the dish's main ingredients (liver, butter, capers, pine, sugar, lemon, vinegar):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Allspicethe original

Fit is the average pairing score against liver, butter, capers, pine, sugar, lemon, vinegar. Candidates are from the same food group and used in at least 100 recipes.
