Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Lecithin in the yolk emulsifies the oil and water, holding the sauce together and thickening it.
Olive oil
Forms the bulk of the sauce, and its fat gives mayonnaise its rich body and texture.
Lemon juice or vinegar
Adds acidity that brightens the flavour and helps keep the emulsion stable.
Dry mustard
Contains natural emulsifiers that help the oil and yolk bind together.

The step that matters

Adding the oil slowly at the start. Oil must be dispersed into tiny droplets around the yolk before more can be added. Adding it too fast overwhelms the yolk, so the emulsion breaks and the sauce turns runny and oily.

Swap the mustard

How well each one fits the dish's main ingredients (egg, olive, lemon, sugar, pepper):

Fit is the average pairing score against egg, olive, lemon, sugar, pepper. Candidates are from the same food group and used in at least 100 recipes.
