What each ingredient does

Large field mushrooms
Provide the bulk of the liquid once crushed and salted, which becomes the ketchup base.
Salt
Draws moisture out of the mushrooms and helps preserve the ketchup.
Cloves
Add warm, pungent aroma that flavours the liquid during simmering.
Black peppercorns
Add mild heat and aroma to the simmered liquid.
Allspice
Adds sweet, warm aroma that rounds out the spiced liquid.

The step that matters

Boil gently for 30 minutes. Gentle simmering extracts flavour from the spices without driving off too much liquid or scorching the mixture. Boiling hard can make the ketchup bitter and cloudy, and sufficient cooking helps it keep once bottled.

Swap the allspice

How well each one fits the dish's main ingredients (mushroom, clove):

  1. Thymefits about as well
  2. Allspicethe original
  3. Cinnamonfits less well
  4. Marjoramfits less well

Fit is the average pairing score against mushroom, clove. Candidates are from the same food group and used in at least 100 recipes.
