Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Boil the rabbit until cooked, then remove all the meat and chop it finely.

  2. Pound the rabbit meat and mix in the grated cheese, cooked macaroni, and chopped onion.

  3. Season the mixture with pepper, salt, and allspice.

Bake and serve

  1. Line a mold with the paste and fill it with the meat mixture.

  2. Bake in a moderate oven at 350°F (175°C) for 1 hour.

  3. Turn out the pie and serve it cold.

Grated cheese
Adds richness and fat, and helps bind the filling with a savoury flavour.
Macaroni
Adds body and starch to the filling, giving it a firmer, more substantial texture.
Onion
Adds savoury, aromatic flavour to the meat filling.
