Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckle
Bones and connective tissue release gelatin, giving the stock body and a silky mouthfeel.
Ham
Cured meat adds savoury, salty depth to the stock.
Onions
As they cook slowly, they contribute gentle sweetness and aroma to the stock.
Carrot
Slow cooking draws out mild sweetness that rounds the stock's flavour.

The step that matters

Simmer gently and skim. A gentle simmer keeps fat and impurities dispersed so they can be skimmed off. A rolling boil emulsifies them into the liquid, leaving the stock cloudy and greasy.

Swap the mace

How well each one fits the dish's main ingredients (veal, ham, carrot, onion, celery, butter):
