Cucumber Pickles

Ingredients

Directions

Prepare the cucumbers

  1. Tie a paper over the cucumbers and place them in a warm spot until they turn yellow.

  2. Wash the cucumbers and place them in fresh water with a little salt and another cabbage leaf on top.

  3. Cover the cucumbers closely and avoid boiling.

  4. If the cucumbers are not a fine green, change the water and heat again.

  5. Once they are a good color, remove from heat and let cool.

  6. Cut the cucumbers into quarters.

  7. Remove seeds and pulp.

  8. Soak in cold water for 2 days, changing the water twice daily.

Make the syrup

  1. In a saucepan, combine sugar and water over heat.

  2. Remove scum as it rises.

  3. Add lemon peel and scraped ginger.

  4. Cook until syrup thickens, then remove from heat.

  5. Let cool before adding cucumbers.

Store

  1. Boil the syrup every 2-3 days for 3 weeks.

  2. Ensure it is cold before adding cucumbers.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Form the main body of the pickles and give them their firm, crisp bite.
Sugar
Sweetens the syrup and balances the sharpness of the pickling liquid.
Lemon peel
Adds bright citrus aroma and a little acidity to the syrup.
Ginger
Adds warm, spicy aroma that flavours the syrup.

The step that matters

Let the syrup cool completely before adding the cucumbers. Hot syrup softens cucumber flesh and can cook the cucumbers, leaving them limp instead of crisp. Cooling first keeps their texture firm.

Swap the cucumber

How well each one fits the dish's main ingredients (sugar, lemon, ginger):
