Ingredients

Directions

Prepare the cabbage

  1. Remove the outer decayed leaves from the red cabbage and cut it into quarters.

  2. Remove the stalks and slice the cabbage thinly.

  3. Place the slices on a dish and sprinkle generously with coarse sea salt, covering with another dish.

  4. Let the cabbage sit for 24 hours, then drain in a colander and lightly wipe with a clean cloth if needed.

Pickle and store

  1. Put the cabbage in a jar.

  2. Boil the vinegar with ginger, black pepper, and cayenne (if using).

  3. Allow the vinegar to cool, then pour it over the cabbage.

  4. Seal the jar and store in a dry place.

What each ingredient does

Red cabbage
Provides the bulk of the pickle and, with its pigments, the purple-red color.
Coarse sea salt
Draws water out of the cabbage slices, softening them and concentrating their flavor before pickling.
Vinegar
Acidifies the cabbage, preserving it and giving the pickle its sharp, tangy taste.
Whole black pepper
Adds warm, pungent aroma to the vinegar as it is boiled.
Ginger
Contributes aromatic warmth and a fresh, spicy note to the infused vinegar.

The step that matters

Salting and resting the cabbage for 24 hours. The salt must draw out enough water and firm the slices; too little salt or too short a rest leaves the cabbage soft and watery, while the pickle's crispness depends on this step.

Swap the ginger

How well each one fits the dish's main ingredients (cabbage, vinegar, pepper):

  1. Dillfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Gingerthe original
