Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Is the main cooked element, its size setting the roasting time.
Dripping from the pan (in the method)
Adds meaty flavour and moisture to the surface and the gravy.

The step that matters

Basting throughout the roast. Regular basting keeps the surface moist and carries fat and juices over the meat, supporting even browning and preventing the outside from drying before the centre is cooked.

Swap the horseradish

How well each one fits the dish's main ingredients (beef, sauce):

  1. Tomatofits better
  2. Onionfits about as well
  3. Horseradishthe original
  4. Capsicumfits about as well

Fit is the average pairing score against beef, sauce. Candidates are from the same food group and used in at least 100 recipes.
