A Very Good Short Crust

Ingredients

Directions

  1. Mix clarified beef dripping with a small quantity of moist sugar.

  2. Use the dripping sparingly to avoid an unpleasant flavor.

  3. Gradually add water to the mixture and work it together with a knife until smooth.

  4. If inexperienced, break butter into small pieces and cover the rolled-out paste.

  5. Dredge with flour, fold the ends over, and roll out thin again, repeating until all butter is used.
