Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter in a large bowl.

  2. Gradually add the flour and mix well.

  3. Stir in the sugar, currants, candied peel, and almonds.

  4. Whisk the eggs in a separate bowl, then blend them with the dry ingredients.

  5. Beat the mixture well for 20 minutes.

Bake

  1. Line a round cake tin with buttered paper and pour in the batter.

  2. Ensure the oven is well heated to prevent the currants from sinking.

  3. Bake in a preheated oven at 350°F (175°C) for 1 to 2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air and give the cake a tender, rich crumb.
Flour
Provides the structure that holds the cake together as it bakes.
Eggs
Add structure, richness and moisture, and help the batter rise.
Powdered sugar
Sweetens the cake and helps create a fine, tender texture when creamed.
Currants
Add fruity sweetness and pockets of chew throughout the crumb.

The step that matters

Preheat the oven well before baking. A well-heated oven sets the batter quickly, so the fruit is held in place and does not sink to the bottom of the cake.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (butter, flour, sugar, currant, egg, almond):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against butter, flour, sugar, currant, egg, almond. Candidates are from the same food group and used in at least 100 recipes.
