What each ingredient does

Tea
Provides the main flavour and aroma as its compounds dissolve into the hot water.
Boiling water
Extracts flavour from the tea leaves and sets the brewing temperature.

The step that matters

Close the lid and let it steep for 5 to 10 minutes. Steeping too briefly gives weak, pale tea, while steeping too long releases more tannins, making it bitter and astringent. Keeping the lid closed holds heat so extraction stays even.
