Baked Beef Tea

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut the beef into small square pieces, trimming off all the fat.

  2. Place the beef in a baking jar with the water and salt.

Bake

  1. Cover the jar well and place it in a warm oven (350°F / 175°C).

  2. Bake for 3 to 4 hours.

  3. If the oven is very hot during the day, put the jar in at night and let it bake until morning.

Serve

  1. Strain the mixture before serving.

What each ingredient does

Beef
Provides the meat flavour and protein that release into the liquid during slow baking.
Water
Acts as the liquid that draws flavour out of the beef as it cooks.

The step that matters

Baking gently for a long time. Slow, moderate heat draws flavour and soluble proteins from the beef into the liquid. If the jar is left in a very hot oven, the liquid may boil and the meat can toughen, so the cook should watch the oven temperature.
