  1. Soak the crumb of the penny loaf in boiling cream or milk for 4-5 hours.

  2. Beat the soaked mixture until very fine.

  3. Add the egg yolks, sugar, and grated nutmeg; mix well.

  4. Heat hog's lard in a pan for frying.

  5. Drop spoonfuls of the mixture into the hot lard and fry until golden brown.

  6. Drain on a sieve and serve with wine sauce.
