What each ingredient does

Green cucumbers
Provide the main body and crisp texture of the pickle.
Refined sugar
Adds sweetness and helps preserve the cucumbers in the syrup.
Brine
Draws out moisture and firms the cucumbers before pickling.
White ginger
Adds aromatic warmth to the syrup.

The step that matters

Removing the salt by soaking. Cucumbers left in cold water for too short a time keep excess salt, making the pickle harsh. Soaking for the full 2-3 days, with water changed as needed, lets salt diffuse out while the cucumbers stay firm.

Swap the cabbage

How well each one fits the dish's main ingredients (cucumber, sugar, lemon, ginger):

  1. Broccolifits better
  2. Radishfits better
  3. Arrowrootfits better
  4. Cabbagethe original

Fit is the average pairing score against cucumber, sugar, lemon, ginger. Candidates are from the same food group and used in at least 100 recipes.
