A Transparent Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the custard

  1. Beat the eggs very well and place them in a pan with the butter and sugar.

  2. Add the grated nutmeg and heat on the stove, stirring until it thickens like buttered eggs.

  3. Pour the mixture into a bowl to cool.

Bake and serve

  1. Roll out the puff pastry very thin and lay it around the edge of a pie dish.

  2. Pour the pudding mixture into the pastry and bake in a moderate oven at 350°F (175°C) for 30 minutes.

  3. The pudding will rise light and clear.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set and thicken the custard as they cook, giving it structure.
Butter
Adds richness and a smooth, silky texture to the custard.
Fine loaf sugar
Sweetens the custard and softens its texture.
Rich puff pastry
Forms a crisp, flaky case that holds the pudding as it bakes.

The step that matters

Stirring the custard on the stove. Egg proteins set gradually with gentle heat, so the mixture thickens smoothly when stirred constantly. Overheating or leaving it unstirred can scramble the eggs into lumps.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, butter, sugar):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against egg, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
