Green Melon in Flummery

Ingredients

Directions

  1. Make a little flummery with bitter almonds and enough spinach juice to achieve a pale green color.

  2. Wet your melon mold and pour in the flummery mixture.

  3. In a large bowl, add 1 pint of clear calf's foot jelly and let it sit until the next day.

  4. Turn out the melon and place it right side down in the bowl of jelly.

  5. Fill the bowl with jelly that is beginning to set and let it sit overnight.

  6. Turn it out the same way as the fruit in jelly and garnish with flowers.
