The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the cream and add richness as they gently set with the heat.
Sugar
Sweetens the cream and balances the sharpness of the orange juice.
Seville orange juice
Provides the tart acidity and main citrus flavour of the cream.
Seville orange zest
Adds aromatic oils that deepen the orange flavour.

The step that matters

Heating the egg yolk mixture. Yolks thicken as they heat but can scramble if overheated. Heat gently and stop just short of boiling so the cream turns smooth and thick rather than grainy.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
