Ingredients

Directions

The book says “a cool oven”. The 300°F in the steps is the modern equivalent, not the book's own figure.

Prepare the almond mixture

  1. Blanch the almonds and beat them finely with orange flower water.

  2. Beat the egg whites until very frothy.

  3. Gradually add a little sifted sugar to the egg whites.

  4. Combine the almonds with the sugar and egg whites, then add more sugar until the mixture is as stiff as paste.

Shape and bake

  1. Lay the mixture in small cakes on paper.

  2. Bake in a cool oven (300°F / 150°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and flavour of the puffs, forming a paste-like base.
Egg whites
Whipped to a foam, they give the puffs lightness and help them hold their shape.
Sugar
Sweetens the mixture and stiffens it into a paste when added to the almonds and egg whites.

The step that matters

Adding sugar to the egg whites and almonds. Sugar added gradually to whipped egg whites stabilises the foam, while adding enough sugar to the almond mixture makes it stiff enough to shape. Too little or too fast can leave the mixture loose and the puffs flat.

Swap the orange

How well each one fits the dish's main ingredients (almond, egg, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against almond, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
