Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb the broth and swell into a thick, smooth body for the sauce.
Meat or poultry broth
Moistens the crumbs and carries the savory flavour through the sauce.
Cream
Adds richness and a silkier mouthfeel to the finished sauce.
Onion
Infuses the liquid with mild aroma, then is removed before serving.

The step that matters

Removing the onion and peppercorns. Leaving them in lets the sauce keep flavouring and thickening unevenly, and bits can spoil the smooth texture. Remove them once the sauce is smooth and thick.

Swap the mace

How well each one fits the dish's main ingredients (tea, bread, meat, onion, cream):

  1. Garlicfits better
  2. Celeryfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against tea, bread, meat, onion, cream. Candidates are from the same food group and used in at least 100 recipes.
