Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Powdered sugar
Provides the sugar that yeast converts to alcohol during fermentation.
Egg whites
Bind impurities that rise as foam, which are skimmed off during boiling.
Yeast
Converts the sugars into alcohol and carbon dioxide during fermentation.
Oranges
Supply juice and peel that add acidity and citrus aroma.

The step that matters

Skimming while boiling. Egg whites coagulate and carry impurities to the surface as foam. Removing that foam thoroughly keeps the liquid clear and reduces off-flavors before fermentation begins.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg, lemon, syrup):

  1. Vanillafits better
  2. Orangethe original
  3. Raisinfits about as well
  4. Raspberryfits less well

Fit is the average pairing score against sugar, egg, lemon, syrup. Candidates are from the same food group and used in at least 100 recipes.
