What each ingredient does
- Barberries
- Supply the tart fruit flavour and the pulp that softens into the preserve.
- Loaf sugar
- Sweetens the fruit and, at this weight, helps preserve it by binding water.
The step that matters
Melting the sugar in the water bath. The sugar must fully dissolve and the barberries must soften before boiling. Undissolved sugar can leave the preserve grainy and can crystallise during storage.
