Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Orange peel
Supplies the aromatic oils and bitter flavour that scent the brandy.
Brandy
Acts as the solvent that extracts flavour from the peels and keeps the drink stable.
Loaf sugar
Adds sweetness and softens the spirit's sharp edge.

The step that matters

Steeping the peels for 48 hours. Peel pared too thick brings bitter white pith into the brandy, which can overpower the aroma. Thin paring and a sealed container keep the extraction clean and the alcohol from evaporating.

Swap the orange

How well each one fits the dish's main ingredients (brandy, sugar):

  1. Vanillafits better
  2. Apricotfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against brandy, sugar. Candidates are from the same food group and used in at least 100 recipes.
