What each ingredient does

Honey
Supplies the sugars that yeast ferments, and most of the sweetness.
Yeast
Ferments the sugars into alcohol and carbon dioxide.

The step that matters

Add the yeast after the liquid has cooled. Yeast cells can be killed by very hot liquid, which would stop fermentation before it starts. Letting the mixture stand overnight lets it cool enough for the yeast to survive and begin working on the sugars.
