Ingredients

Directions

The book says “a moderate oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the beef

  1. Soak the shin of beef in water for 1 hour.

  2. Remove the beef, cut it into small pieces, and break the bones.

  3. Place the beef and bones in a stew-pan with 6 quarts of milk.

Cook and strain

  1. Cook in the oven at 300°F (150°C) until reduced to 3 quarts.

  2. Skim off the fat and remove the bones.

  3. Strain through a jelly bag.

  4. Add hartshorn shavings and cinnamon, then boil gently over low heat.

What each ingredient does

Shin of beef
Provides gelatin-rich collagen that sets into a jelly as the liquid cools.
Milk
Forms the liquid base that is reduced and carries the flavour of the beef.
Hartshorn shavings
Ammonium carbonate that acts as a leavening agent, helping the jelly set lighter.
Cinnamon
Adds warm, aromatic spice flavour to the finished jelly.

The step that matters

Reducing in the oven until 3 quarts remain. Reduction concentrates the dissolved gelatin and flavour, so the jelly sets firmly. Stopping too early leaves it too thin, while overcooking can scorch the milk and darken the colour.

Swap the cinnamon

How well each one fits the dish's main ingredients (beef, milk):

  1. Cinnamonthe original
  2. Pepperfits about as well
  3. Nutmegfits less well
  4. Celeryfits less well

Fit is the average pairing score against beef, milk. Candidates are from the same food group and used in at least 100 recipes.
