What each ingredient does

Beef
Forms the main body of the dish, which becomes firm and sliceable after curing and baking.
Salt
Draws out moisture and seasons the meat, helping preserve it during the long cure.
Brown sugar
Balances the salt with mild sweetness and helps the cure taste rounded.
Pepper
Adds sharp aroma and heat that flavour the meat through the cure.
Allspice
Contributes warm, aromatic spice notes that season the meat.
Nutmeg
Adds warm, sweet aroma that complements the other spices.

The step that matters

Turning and rubbing the beef every morning. Salt and spices must reach all parts of the meat evenly. Regular turning keeps the cure distributed and prevents dry or unevenly seasoned spots during the long curing period.

Swap the allspice
