What each ingredient does

Cucumbers
The main vegetable; gentle cooking softens them and turns them green.
Vinegar
Provides acidity that sharpens flavor and helps preserve the pickle.
Garlic
Adds pungent aroma and sharp savoury flavor.
Horseradish
Contributes a sharp, pungent heat that cuts through the vinegar.
Mustard seeds
Add a sharp, slightly bitter bite and aroma when steeped in the pickle.
Black pepper
Adds warm, sharp spice that rounds out the pickle's heat.

The step that matters

Cook the cucumbers over low heat. Gentle, low heat over several hours keeps the cucumbers firm and preserves their green colour. Higher heat breaks down their cell walls, making them soft and dull in colour.

Swap the mace

How well each one fits the dish's main ingredients (cucumber, horseradish, mustard, garlic, vinegar, clove, ginger):

  1. Allspicefits better
  2. Turmericfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against cucumber, horseradish, mustard, garlic, vinegar, clove, ginger. Candidates are from the same food group and used in at least 100 recipes.
