Ice Cream Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the cake

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the beaten egg whites, sugar, butter, milk, flour, and baking powder, then mix until smooth and pour into thin layers in baking pans.

  3. Bake until golden and set.

Make the cream and assemble

  1. In a saucepan, boil together 2½ cups sugar and ½ cup water until syrupy.

  2. Beat the 3 egg whites until stiff peaks form, then gradually add the syrup while beating until glossy.

  3. Spread the cream between the layers of cake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Provide structure and set the cake as they cook.
Flour
Forms the structure of the cake crumb.
Butter
Adds fat for tenderness and a rich flavor.
Sugar
Sweetens the cake and helps it brown as it bakes.
Baking powder
Releases gas during baking so the layers rise.

The step that matters

Adding the syrup to the egg whites. The syrup must be hot and added slowly while beating, so the whites cook gently and form a stable, glossy meringue. Adding it too fast can deflate the foam.
