What each ingredient does

Sweet almonds
Provide the main almond flavour and a smooth, creamy body when pounded.
Fresh cream
Supplies fat and richness, giving the dessert its soft, creamy texture.
Gelatine
Sets the cream so it holds its shape when chilled and sliced.
Bitter almonds
Add a deeper, more intense almond aroma in small quantity.

The step that matters

Heating the almond and cream mixture. Stirring constantly over medium heat keeps the cream from scorching or sticking, and heating only until scalded avoids boiling, which can dull the cream's flavour and texture.

Swap the orange

How well each one fits the dish's main ingredients (almond, cream):

  1. Vanillafits better
  2. Coconutfits better
  3. Avocadofits better
