Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the milk and yolk mixture into a soft, spoonable custard.
Egg yolks
Thicken the milk mixture and add richness to the custard.
Egg whites
Whipped to a froth to lighten the cream and add airy volume.
Cream
Whipped to soft peaks to add richness and a light, fluffy texture.
White sugar
Sweetens the mixture and helps stabilise the beaten egg whites.

The step that matters

Thickening the custard over low heat. Egg yolks and gelatine can curdle or scramble if overheated, so gentle low heat and constant stirring keep the custard smooth and evenly thickened.
