Puff Paste

Ingredients

Directions

  1. Knead the butter until all buttermilk or water is squeezed out.

  2. Wet your hands and the molding board with cold water.

  3. Ensure the butter is free of cracks to avoid flaky pastry.

  4. Wrap the butter in a floured towel and place it in a cool place.

  5. Mix flour, egg yolk, butter, lemon juice, salt, and enough cold water to form a soft paste.

  6. Knead the dough for about 5 minutes until it pulls away from your hands.

  7. Roll the dough into a circle the size of a large dinner plate.

  8. Place the butter in the center, fold the sides over, and roll into a strip three times as long as it is wide.

  9. Fold one third over the middle, then the other third over that to create three layers.

  10. Roll out again into a strip three times as long as it is wide.
