Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body.
Egg yolks
Enrich and thicken the custard, adding richness and smoothness.
Egg whites
Whipped into a stiff foam that forms a light, airy topping.
Sugar
Sweetens the pudding and helps stabilise the whipped egg white topping.
Shredded coconut
Adds coconut flavour and a chewy texture to the pudding and topping.

The step that matters

Boil the pudding with the egg yolks. Egg yolks thicken only when heated enough to set, but overheating can curdle them. Keep the mixture at a steady boil and stir constantly so the pudding thickens smoothly.
