Why it works: Ginger and lemon match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ginger Beer

Ingredients

Directions

Prepare

  1. Bruise the ginger and place it in a large earthenware pan with the sugar and cream of tartar.

  2. Peel the lemons, squeeze out the juice, strain it, and add both the juice and peel to the pan.

  3. Pour boiling water over the mixture.

Ferment

  1. When the mixture cools to just warm, add the yeast and stir well.

  2. Cover the pan with a cloth and let it sit near the fire for 12 hours.

Bottle and rest

  1. Skim off the yeast and carefully pour the liquid into another vessel, avoiding sediment.

  2. Bottle the liquid immediately and cork it tightly.

  3. In 3 to 4 days, the ginger beer will be ready to use.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brewer's yeast
Ferments the sugar, producing carbonation and the drink's characteristic fizz.
Loaf sugar
Provides the food for the yeast and sweetness that balances the tart flavour.
Cream of tartar
Adds acidity that gives the drink its tangy, tart character.
Ginger root
Supplies the spicy aroma and flavour that defines the drink.

The step that matters

Adding the yeast while the mixture is only warm. Yeast is killed by hot liquid, so the mixture must cool to just warm before the yeast goes in; too hot and fermentation will fail.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream, ginger):

  1. Vanillafits better
  2. Coconutfits about as well
  3. Lemonthe original
  4. Orangefits about as well

Fit is the average pairing score against sugar, cream, ginger. Candidates are from the same food group and used in at least 100 recipes.
