What each ingredient does

Gooseberries
Provide the fruit that gives the preserves their body and tart flavor.
Sugar
Sweetens the preserves and, as it thickens the syrup, helps the fruit hold its shape.

The step that matters

Boiling the fruit and syrup on the second day. Boiling until the syrup turns clear and thick concentrates the sugar and sets the preserves. Stopping too early leaves a thin, runny syrup that may not keep well.
