Prairie Chicken

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Clean the prairie chickens using a little soda in the washing water.

  2. Rinse and drain the chickens, then fill them with dressing and sew them up.

  3. Bind down the legs and wings with cord.

  4. Place the chickens in a steamer and cook for 10 minutes.

  5. Transfer them to a pan with a little butter.

  6. Bake in a 400°F (200°C) oven, basting frequently until browned, about 35 minutes.

  7. Serve on a platter with sprigs of parsley and currant jelly.
