Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells as it soaks and cooks, thickening the custard and giving it a soft, slightly chewy body.
Eggs
Set when stirred into hot custard, adding richness and body to the mixture.
Milk
Forms the liquid base that the tapioca swells in and the custard is built on.
Sugar
Sweetens the custard and lowers its freezing point, keeping it softer when frozen.
Whipped cream
Adds air and fat that lighten the frozen texture and make it creamier.

The step that matters

Stirring in the eggs off the heat. Eggs can scramble if they meet very hot liquid too fast. Stirring them into the hot mixture, then removing it from the heat, helps them blend in smoothly and thicken the custard gently without curdling.
