Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef heart
Dense muscle that becomes tender with long, gentle moist cooking and then browns in the roast.
Ham forcemeat or sage and onion stuffing
Fills the cavity, adding moisture and savory flavour as the heart cooks.
Good dripping
Fat that bastes the surface, promoting browning and a rich, savory crust.

The step that matters

Simmering before roasting. Simmering gently in water tenderises the dense, lean muscle before roasting. Boiling hard instead can toughen the meat and make it dry, so keep the water at a gentle simmer.

Swap the currant

  2. Pineapplefits better
