What each ingredient does

Veal cutlets
Provide the meat that is cooked through by broiling, staying tender when cut thin and flattened.
Egg yolk
Acts as a binder so the bread crumb coating sticks to the cutlets.
Bread crumbs
Form a crisp, golden coating that helps shield the meat during broiling.

The step that matters

Wrapping in buttered parchment. The paper must be well buttered and sealed at the ends so the coating and meat do not dry out or stick under the heat. Wrapping keeps juices in while the cutlet cooks through.
