Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the dense, savoury body of the pudding.
Eggs
Bind the mixture and help it set firm when cooked.
Bread crumbs
Absorb liquid and give the pudding a soft, cohesive texture.
Ham
Adds salty, savoury flavour and meaty texture.

The step that matters

Keep the water below the top of the mold. If boiling water reaches the lid, it can seep in and make the pudding waterlogged, while a gentle, steady simmer cooks the egg-bound mixture evenly and keeps it moist and firm.

Swap the onion

How well each one fits the dish's main ingredients (liver, ham, bread, egg, parsley, pepper):

  1. Carrotfits better
  2. Shallotfits better
  3. Capsicumfits better
  4. Onionthe original
