What each ingredient does

Beef
Is the meat being cured, becoming tender and seasoned as the brine-like rub penetrates it.
Salt
Draws moisture out of the meat and carries the cure into the fibres, seasoning and preserving it.
Saltpetre
Helps the meat keep its pink colour and adds a cured flavour during the curing period.
Molasses
Adds sweetness and a dark, rich flavour that balances the salt.

The step that matters

Turning and rubbing the beef daily. Salt and cure only penetrate the meat slowly, so uneven coverage leaves some areas under-seasoned or poorly preserved. Turning it every day lets the mixture reach all surfaces evenly over the full curing period.

Swap the clove

How well each one fits the dish's main ingredients (beef, molasses, pepper):

  1. Clovethe original
  2. Allspicefits about as well
  3. Cinnamonfits less well
  4. Gingerfits less well

Fit is the average pairing score against beef, molasses, pepper. Candidates are from the same food group and used in at least 100 recipes.
