What each ingredient does

Chicken or turkey remains
Provides the main body and flavour of the croquettes.
Eggs
Bind the minced meat together so the mixture holds its shape.
Bread crumbs
Absorb moisture and add body to the filling, and form a crisp outer coating.

The step that matters

Frying in boiling lard until light brown. The fat must be hot enough to set the breaded coating quickly and brown it. If the lard is too cool, the croquettes absorb grease and may fall apart or turn heavy and soggy.
